Toddler Burrito

Ingredients
  • 1 can {15 oz} Pinto Beans
  • ¾ cup Cooked Brown Rice
  • ¾ cup Shredded Sharp Cheddar Cheese
  • 2 Tbsp. Mild Salsa {optional}
  • 6 Whole-Wheat Tortillas {8 inch}
Instructions
  1. Rinse beans until water runs clean and drain thoroughly. Transfer to a large bowel and mash with a fork or potato masher.
  2. In a saucepan over medium heat, warm the beans.
  3. Add rice, cheese, and salsa (if using) to beans and mix until blended.
  4. Divide mixture evenly among tortillas.
  5. Fold in 2 ends and roll burritos.
  6. To store: Burritos can be kept in the freezer for a weekday lunch or dinner or a to-go meal. Wrap burritos individually in aluminum foil, seal in a large freezer bag, and freeze for up to 3 months. To thaw frozen burrito, place in refrigerator overnight.
