My lack of cooking in this house is no secret so you know when I share a recipe here on the blog that it must be a worthy-enough one.
Trust me, this chicken dish is super fantastic AND…it has minimal ingredients.
Plus, it’s semi-healthy, minus the mayonnaise and all. Ahem.
Hey, it’s healthier than the things I ate in the past. I call that a win.
Ingredient List:
Boneless Chicken Breasts {4}
Artichoke Hearts, drained and chopped {1-15 oz can}
Grated Parmesan Cheese {3/4 Cup}
Mayonnaise {3/4 Cup}
Garlic Powder {1 pinch}
What to do:
Preheat oven to 375 degrees.
Grease baking dish.
Cut chicken breasts in half {down the center horizontally}. Place them in the greased baking dish.
Drain and chop artichoke hearts.
Mix 3/4 Cup grated parmesan cheese, chopped artichoke hearts, 3/4 Cup of mayonnaise, and a pinch of garlic pepper in a bowl.
Coat the top of the chicken with the artichoke mixture.
Bake on 375 degrees for 35 minutes or until chicken is no longer pink in the center.
My husband claims this is the best chicken dish I have ever made! TRY IT!

Hmmm……I wonder if Greek yogurt would work in place of the Mayo, making it guilt free?

That was exactly my thought too! I’ve been using Greek yogurt as a sub for all the white creamies lately and am always impressed with how it turns out. This sounds really tasty-will definitely be trying it soon!!

Made this last night and it was the easiest dish I have ever made! I had everything on hand except the artichokes, but after a quick run to the store, I had it in the oven in no time. My husband kept giving me the side eye when he saw me chopping up the artichokes and I said “Relax, artichokes as in Spinach Artichoke Dip” and he was good to go. He loved it. Wow! We began eating low carb at the start of the year. My wife and I tried this recipe last night and it is wonderful!!! It is definitely going into our regular meal rotation and is going to be one of my very favorites. Meal prep is extremely easy as well.

me and my husband are doing low carb and friends invited us for dinner so I offered to bring the main dish and had just found this recipe so I took this and baked it there. They all raved about it and went back for more until it was gone! I added some jalapeños to give a little kick but not too much as I can’t take a lot. So good!!! Making tonight!!????
