In a skillet on med-high heat, cook hamburger patties til desired doneness (I cooked everyone's to 165 degrees F). While those are cooking, chop a cups worth of grape tomatoes. Pour about 1-2 TBS of balsamic vinegar over the grape tomatoes and mix.
Slice the mozzarella and lay cheese on hamburger patties until it's melted. I used chibatta buns, and toasted them until a bit crispy. I toast mine in the oven on 400 degrees F for a few minutes.
To assemble, I place the hamburger patty on bottom bun, put balsamic tomatoes on top, and using jarred pesto I spread desired amount on the top bun. And there you go, bruschetta burgers!
