My neighbor called me and asked me if she could borrow some butter. Except when I showed up at her door with margarine…she looked at me like, “That ain’t butter sista!”
<<insert embarrassed neighbor who doesn’t do a lot of cooking>>
I didn’t even know what “real” butter was until last week. Apparently I have been using fake butter all these years. And I hate that it took a neighborly lesson of “let me borrow your butter” to bring me to my breaking point…but it did.
So I just want to make it very clear to all of you {and any neighbors who might be reading this – ahem}…I have made the switch to REAL butter.
And now when you ask to borrow butter…I will happily bring over some butter…not margarine. Your welcome.
Flash forward 2 weeks later and in walks said neighbor who asked to borrow my margarine butter.
She witnessed me about to throw out a few strawberries that had been in the refrigerator and were on their last day when she suddenly yelled, “Waaaaaiiiitttttt!”
Me: What?? Calm down.
Neighbor: You aren’t throwing those away are you?
Me: Yes, why?
Neighbor: You can use those to make strawberry butter.
Me: Glossy eyed blank stare. Pause. Pause. Pause.
Neighbor: Have you never made homemade strawberry butter?
Me: <<me thinking to myself…this is going a lot like the margarine/butter dilemma…I see it now>>
*cough* no *cough*
Neighbor: Give me those strawberries…we’re making strawberry butter!
And that’s how the Homemade Strawberry Butter day went down in history.
I was pretty much sold when she told me it only required THREE ingredients. 3 people. Not a million. THREE.
Even better news…since I had recently realized margarine was no comparison to butter…I actually had REAL butter on hand. Mark that on your calendar.
Oh, how she was proud.
Ingredients:
1 stick of butter softened {real butter not margarine…don’t make me preach it} 1/2 cup of chopped strawberries 1/4 cup of confectioners sugar – more or less to tasteLiterally all you do is throw those three things in to a food processor {you can use a blender or mixer as well} and mix.
It’s pretty much amazing on anything…especially a bagel.
Thankfully my neighbors don’t judge my inability to bust out recipes with food that’s about to go bad. At least I hope not.

Until I started ‘really’ cooking, I just figured margarine was real butter, too! LOL! YUM! That looks delish!

Yes, real butter not only tastes more delicious, it’s much healthier for you. Of course, it’s a fat, so eat in moderation people. But it’s not full of all kinds of crazy chemicals/ingredients like your margarines and country crocks…sorry, I work in the natural health field. I rant…ANYWAY – that strawberry butter looks fantastic and I can’t wait to try it out!!! YUMMMMM!!!

Don’t feel bad… due to some restrictions to M’s diet we switched to unsalted margarine. Um, yeah… If I’m being honest I salt/sea salt my serving. Another tasty treat for those strawberries, cut them up, cover with a heap of sugar and stir. Let them sit in the fridge for about 30 minutes to an hour and put them on a biscuit/toast/pound cake. Yum!

Oh man! Now I’m wishing I hadn’t just thrown out a bunch of strawberries! So going to try this with the blueberries though. So glad you made the switch to real butter!

If it makes you feel better… I never have real butter in the house. But this recipe made me want to go get some!!! & from the comments I feel like I need to stick to real butter from now on!

Looks so yummy! I made the switch when I worked in a health spa. We left country crock outside for 7 days in the blistering summer and not one bug was on it! It’s basically one molecule away from plastic 🙂 real butter is the Bomb! Thanks for the recipe!
