Today I’m having one of my favorite ladies take over the blog. Her name is Shay and you might know her as “Sean’s sister”. As in, Sean the Bachelor. Yes.
I met Shay months back and got to know her better when we did the Marriage Series together. She is one of the most down to earth, genuine, Jesus loving ladies you will find…and her personality is truly the sweetest. Plus, her kiddos…TO DIE FOR!
Shay has a family blog and a food blog, both equally addicting and I am so excited that she is sharing two of her fabulous recipes. Take it away girl…

With summer quickly approaching, I told Mandy that I would love to share two quick and simple recipe ideas to use over and over again this season. Enjoy your summer Mix and Match Mama style…
Taco Joes
Everyone loves a Sloppy Joe, right? Well, my Taco Joes take the Joe to a whole new level. Flavorful, simple and quick to get on the table.
Preheat your oven to 425 degrees.
Over medium-high heat, brown your ground beef until crumbly. Stir in your Rotel, chili beans, green chiles, and taco seasoning. Reduce heat to low and simmer about 10 minutes.
On a foil lined baking sheet (for easy clean-up!), lay out 6 burger bun halves (so three buns total). Spoon your ground beef mixture on top of each half. Top each Joe with cheese.
Place baking sheet in the oven and bake about 10 minutes (or until the cheese looks nice and bubbly). Remove from oven and serve with chopped green onions down over the top.
So easy, right?
This was one of those meals that I threw together in minutes on a busy school night. Yummy!
I used mild chili beans to make the Joes more kid friendly, but you use what your family likes. You could also use Mild Rotel, but I used the Original Rotel (which is slightly spicier). No matter how you make it, you’ll heart this Joe too.

Orange-Poppy Seed Bundt Cake
Over in my kitchen, I’m taking one bundt cake recipe and mixing and matching it 100 ways to create new and fun cakes using the same staple method.
This Orange-Poppy Seed Bundt Cake was #26…and such a hit! Light and fresh, this cake will make you want to sit out next to a pool with a glass on lemonade.
Shopping List 1 box of yellow cake mix 2 small boxes of instant vanilla pudding 1/2 cup of veggie oil 1 1/4 cups water 4 eggs 2 tablespoons poppy seeds 1 orange, you’ll use the zest and the juice (if it’s small, get two oranges!) 2 cups powdered sugar Preheat oven to 350 degrees Grease (I use Pam) a 10 inch bundt pan
In mixing bowl, combine cake mix, puddings, oil, water and eggs with electric mixer. Stir in poppy seeds and half of your zested orange (reserve the remaining half) and half of the juice of your orange (reserve the remaining juice). Pour into prepared pan and bake 40-45 minutes or until toothpick inserted comes out clean.
Let cake rest on counter in pan 10 minutes. Then, invert cake onto serving plate to finish cooling.
To make the glaze, combine powdered sugar with remaining orange zest and juice. (Add more powdered sugar if your glaze is too runny or more juice if it’s too thick.) Spoon over cooled cake.
