I rarely cook {you know this about me}, but lately I have been cooking A LOT! And by “a lot” I mean 3 days a week.
Baby steps people, baby steps.
And listen…anytime I cook something that turns out good…I smile.
And then post about it.
I don’t know if it’s the fact that I work from home or that I keep finding recipes on Pinterest that make me want to eat my computer screen…but either way my husband is not complaining.
Not to mention…I’m kind of even impressing MYSELF.
Ahem.
I actually stole this recipe from my friend Jody over at Keeping Up With Kennedy. I got her permission to share the recipe here…ENJOY!
Ingredient List:
Olive Oil {2 TBSP} Skinless, boneless chicken breasts {4-6} Kale {2-3 Stems} Marinara Sauce {16 oz Newman’s Own} Mozzarella cheese {8 slices} Grated Parmesan Cheese {1/2 Cup} Salt & Pepper
Step-by-Step:
Preheat oven to 400 degrees.
Salt & pepper the chicken.
In a saucepan heat your olive oil over medium-high heat.
Cook the chicken in the saucepan just long enough until the chicken is golden brown on each side {2-3 minutes per side}.
When the chicken is lightly cooked set it aside on a plate.
Remove the kale leaves from the stem {I just tore it off by hand}. Cook in the olive oil that is left over from the chicken. You may need to add a teeny bit of olive oil. Just make sure the bottom of the pan is coated.
Cook on medium-high heat until the leaves are wilty {approximately 3 minutes}. Then layer the bottom of your dish with the kale.
Set the half cooked chicken on top of the kale.
Add 16 ounces of marinara sauce over the top. Make sure the chicken is coated in marinara.
Put 2 pieces of mozzerella cheese over each chicken breast.
Sprinkle 1/2 cup of grated parmesan cheese over the top.
Cook on 400 degrees for 30 minutes or until chicken is cooked.
Eat your happy hearts out! It’s THAT good…and THAT simple!
I served mine with a side caesar salad and it was divine!

I’ve been trying to trick my kids into eating more green but usually we just make them a separate dinner so we don’t have to spend our whole meal arguing with them. Did your kids eat the kale? I’ve never cooked kale but think I want to try this recipe.

Oh wow, that looks yummy and SO much easier than the way I prepare it by breading the chicken and pan frying it first before baking with sauce and cheese. I will definitely have to try it your way! Love how you use disposable pans, too, EASY cleanup!!
I was wondering the same thing as Anna (above)! Who cooks all the meals for your kids and husband since you mentioned that you rarely cook?
I would LOVE not to have to cook meals every single day, Ha!

Just wanted to pop over and say thanks for sharing this recipe! I made it the other night and it was wonderful! And so much easier than the kind of Chicken Parmesan I have been cooking for years. And for those questioning the “lack” of cooking, this is just a guess but I would say Mandy is more referring to not cooking actual recipes. When I read it I pictured the nights I call grilled cheese and tomato soup dinner! Food yes, but labor intensive cooking, no. Just a guess but none the less thanks for sharing!
